Citrus Avocado Chicken with Roasted Garlic Mashed Potatoes By Marisa | July 1st, 2006
Ingredients:
2 flash-frozen boneless skinless breasts
1 lemon
1 orange
2 avocados
half a cup or so of good balsamic vinegar
honey
potatoes
garlic
lemon pepper
coarse sea salt
Season chicken with lemon juice, salt and lemon pepper. Broil.
Boil potatoes.
Mash potatoes with a stick of butter, a couple bulbs of roasted garlic and some sea salt.
Mash avocadoes and stir in balsamic vinegar, juice of the orange, salt and a spoonful of honey. Pour avocado sauce over chicken.
That’s it! Dinner in 15 minutes, assuming you always keep roasted garlic on hand like I do.

Hey! time for some shameless self-promotion and shout-outs to my peeps.
Well, if you've read this far, why not? This blog runs on Kick-ass Wordpress, the best blog software in the world using the Crimson Milk theme by Andrew Sutherland because Marisa is just way too lazy to make her own. Did you realize you can move stuff around? Try it. It's Ajax-a-licious. Grab something with your mouse and scootch it wherever you want it to be.Technorati thinks I'm cool. You should too.
