Every now and then I get a seriously major craving for cookies. But, not being a big baker, I don’t usually have all the accoutrements you need to make fantastic cookies. Plus there’s the limited attention span and steadfast refusal to use measuring tools … etc.

So here you go. Seven ingredients even I had lying around. 15 minutes total. Boop helped. Yum.

2 eggs
1 cup of sugar
dash of salt
handful of nuts - I think I had walnuts and crunched them into smaller pieces in my hand before throwing them in
1/2 cup flour or so
1 cup quickie oatmeal

some chocolate leftover halloween candy
a little butter

Heat the oven to 375. Beat the eggs with a whisk or a fork or something and then throw everything else in and mix till it’s gooey. Sling by messy spoonfuls onto buttered/greased pan. Set timer to 9 or 10 minutes.

When cookies don’t yet look done, take them out. Cookies seem to undergo a magical process during the cooling period. I’ve never been able to explain it - but if you wait till they look done to take them out, they’re hard by the time they get into your mouth. But then again, I prefer a mooshy cookie over a crunchy cookie.

If your oatmeal stuff is flavoriffic you might want to hold back on the sugar a bit. I did half cinnamon-spice flavor, half plain, and did about 2/3 cup sugar. Ish.

When the cookies are done melt some choc in the microwave. My six month old halloween candy did just fine. I find that melting a bit of butter with it is helpful. 30 seconds was perfect on my micro. Grab a fork and get all drizzly with the melted choc on top of the cookies. Allow little people to help with the drizzling if you’re ok with your kitchen looking like mine, which is to say like a hurricane and an earthquake hit simultaneously. Cool. Eat. Eat some more. Hide the rest from the little people so you can be greedy and selfish later. Or share, if that’s your thing.
